White Bean Chicken Chili

Ingredients: 

2 tbsp Butter/ Olive Oil/ Butter Substitute

½ cup chopped Bell Pepper (frozen)

1 cup chopped Onion (frozen)

1 can Green Chillies (tiny can)

6-8 cups Chicken Broth 

1 pkg McCormick White Chicken Chili Seasoning 1.25 oz

1-2 cans Cannellini Beans, depending how much you love beans. I add 1 only but it could handle 2.  

2-4 cups Shredded Chicken Breasts (previously cooked in crock pot) (could use rotisserie chicken)


Optional Garnishes: 

Light Sour Cream/Greek Yogurt 

Tortilla Chips 

Fancy Shredded Mexican Cheese Blend

diced avocado

lime wedge

cilantro (or parseley/green onion if cilantro tastes like soap to you)

PICO DE GALLO

JALAPENOS (FRESH OR PICKLED)


Heat Butter in Dutch Oven pot on medium heat. Add frozen onions and bell peppers, sweat them down. Once tender, add green chillies. Stir and simmer for 2 mins. Next, add chicken broth, seasoning pkg, beans and chicken. Let bubble and simmer for 15-20 mins. Until all is incorporated and beans are even more tender. Turn off heat. Ladle into bowls. Add 1-2 tbsp of Light Sour Cream or Greek Yogurt & Crushed Tortilla Chips. Could also add fancy shredded Mexican Cheese Blend. 

Forgive the leniency in my recipes. I rarely measure, unless baking. When cooking soups, sauces, etc. it’s all about texture, taste and consistency for me. And it can be variable and unique per person. I will always give you the basics, suggestions for what I did, but you are free to add a little more or less of what you love to make it exactly how you like it. For instance, you could add more broth if you like a looser soup, or less if you like thick hearty soup. You could add more chicken or beans, depending on which you like better. You could make it no bean or no meat chili also. 

I cook Chicken in crock pot at the beginning of most weeks, because it’s super easy, less mess and can add to recipes like this, chicken salad, tacos, other dishes easily. So I had cooked chicken breasts on hand that I shredded for this recipe. But if you don’t have cooked chicken on hand, you could buy an already cooked Rotisserie chicken and shred both white and dark meat of it and use in this recipe.
